If you use the Hikashop filters or the Hikashop search module and attach them to a specific menu where image are displayed you should be able to see the product image in the result list.

I'll look at the filter module, but initial impression is that it limits a user's ability to retrieve products by various filters created on the backend rather than freeform textual search like Joomla's search capability.
It's the hikashop filter module that you need to use.
If you create a new filter, you will see that you can select its type and that one of the types is "text", which allows you to have a search textbox like the joomla search module.
