Custom report

Here's what I would like to do :
I have customers that can register for a session, and they have to enter two names (skater name and coach name).
Places are limited to 25 skaters.

So, I've created products (for the sessions) and used to 'entry' custom fields to be able to receive the two names.

I would like to be able to make a report per product, which can be used as a list of the skaters (and coaches) who are skating on that particular session.

I've been looking at the mass action session, but I do not seem to be able to use the mass actions on a 'per product' basis.
You can get a list of all the orders, and then the values of the custom fields are shown, but I need it per product.

I would also love for this report to be made automatically and being uploaded as a csv to my google drive if possible (or sent via email) X time before the session starts.

Other things we would love to have :
remove 'add to cart' functionality : x-time before "Product available until" (but product still visible on the site).
