Please indicate the HikaShop version that you're using ; it help the support team to provide you an answer regarding the features that you can have, like the new checkout system of HikaShop 3.

Thanks to a custom plugin (so custom development), you can dynamically change the checkout workflow depending elements like the cart content.
So, yes it is possible to imagine a plugin which will set a different workflow depending products.

HikaShop 3.4.0 have the new checkout system which allow an add-on (or plugin) to override the workflow dynamically.
For example HikaAuction and HikaSubscription can override the checkout if there is an auction or a subscription product into the cart.

So yes, it is possible to imagine a custom plugin which would check the content of the cart and provide different workflow depending the categories of the products.
Please note that it would require some development and PHP skills.
