Hikashop content module - display price "from 50 Euros" when variants

There is no such kind of option because you can't be sure that the product have different prices for the variants.
It would require to load all the data for the variants and it would require a big amount of memory/processing.
But if you want to perform some customization in the display ; you can use a view override.

As explained in the link Jerome gave you, you can activate the "Display view files" setting of the HikaShop configuration in order to easily see which view file to edit.
