Remove quantity window from slider and catalog?

Go in the Joomla menu manager and edit your menu item. There, under the "products options" tab, you'll have the option "Quantity field" that you can use to disable it.
It's the same for modules under the "hikashop options" tab of their options in the Joomla modules manager.

I'm not sure why it wouldn't work.
However, you can also easily hide it with CSS. For example, you can add such CSS:

.hikashop_products_listing .hikashop_product_quantity_input_div_default, .hikashop_products_listing .hikashop_product_quantity_change_div_default {
    display: none !important;
}
