Is it possible (with some code changes - ok) to make it so that we can have multiple Authorize.Net accounts and assign then to specific products / categories?

The reason that I ask is that we have one website but different divisions of the company.

No, that's not possible. It should be possible in the future with the multi vendors system that we are working on at the moment, but you will have to wait a few months before being able to use it.
