I try to find the string for translation " last 7 orders" and "last 7 customers" and can't find it.

sure. But the central text Продажи за последние 30 дней was translated.
I want to translate the text on the left and on the right. So Russians can get full translated Hikashop

That translation key is not in the translation file by default.
But you can add it like that:
SALES_OVER_THE_LAST_30_DAYS="Sales over the last 30 days"
