If you do that change, it means that when you create a new instance of that payment method, the description will be in one language or another based on the language you are in on your backend. But then the text will be the same on the frontend, regardless of the language, as it is used only to set the default text there. So It won't do what you want. I would recommend to use the solution I proposed.
