Concerning your alternative, What you could do is create some specific discount categories and use these categories in your discounts so that they apply only to the products in these categories. Then, you could just add the category to a product so that it would get the discount applied to its prices. Then, below it, you can have your discount categories. That way, they won't appear in your listings on the front end but they will still be used for the discounts since they are published.
