What I would like to happen is for the product's category to display instead (with the list of products in that category). I assume customising the cart template would be one way of achieving this. Is there another way / new feature request?")* Customizing the cart template is indeed the way to go with this. Changing the link URL itself will be easy. However, you will have to add a query to load the category of the product from the table hikashop_product_category in order to set it in the URL.
