I'm using HikaShop starter and to place an order, currently, a user must be a registered member on the site. So when they try to checkout, an email is sent to them to confirm/activate their account, and then when the come back to the site they can complete their order. I read in the forums that the paid versions have the ability to bypass this email verification, which I took to mean that a user can checkout without having to confirm/activate their account via their email address. Is this correct? And if so, which paid version allows this? Does Essential allow this feature or do I need to buy the most expensive version of HikaShop?

HikaShop Essential has indeed an option to simplify the registration by not asking the username name and password related to the user account and only the email address of the customer.
Concerning the activation of accounts, by turning off joomla's account activation, it will be turned off in HikaShop as well.
