And in HikaShop > Configuration > Checkout "Clean cart when order is", here you can change when the cart must be emptied. You have the option "Update the product stock on confirmed status" of the configuration to remove the item from inventory when the order is confirmed (payment has been done), but if you keep it turned off, the item is removed from the inventory when the order is created at the end of the checkout, before redirecting to the payment gateway.
