It requires some order custom fields, like we did in our demo website but it requires so custom development too. You will need to code your specific rule for your product "quick service" into the checkout in order to show or hide the delivery time custom fields. Then you have to add custom code to hide the values depending on time. You can hide the values in the view "checkout / custom_fields".
