When you create or edit a product, you can find a "quantity" field. There, you can set/modify the quantity of the product, whether the product is damaged or not. Please note that function is provided by all commercial HikaShop edition which start with HikaShop essential. If you want to stay with HikaShop starter ; the other solution is to create custom plugin.
