This looks like a problem with the database. Turn on the debug mode and error reporting options of the Joomla configuration and try again. Do you get an error when saving the product ? If so what is the error ? 2. The program doesn't recalculate the prices when you change the tax rate selection unless you save the product. That's the way it is done.
