I will upgrate for shoor!")* Hi, 1. You can create categories via the menu Products>Categories. In each category, you have the option "parent category" where you can select the parent category you want for your category. You can also use the left category explorer to access the listing of sub categories of a category and then click on the "new" button to get a new category created under the current category of the listing. And then you can simply select the category(ies) that you want for each product in the "categories" listing area of each product. 2. You need to add your image with the area "Images" that you can see at the bottom right corner of the product edition page when you edit it.
