If you follow our documentation on characteristics, you create one characteristic (color for example) with all the values you need (red, blue, yellow, green, etc). Then, you add that characteristic to your product, and under the variants tab of the product, you generate all the variants for that characteristic. When you add the variants of the product under the "variants" tab, just select the colors you want available for that product. The others won't appear. I used Custom Fields instead, seems to address our needs.
