Ronald")* Hi, HikaShop Essential allow to create custom fields for "products", for "user" or "address" but not for "order" or "item". You need HikaShop Business to do that. So the text custom field you're talking about is not an order custom field but seems to be an address custom field. The information will be available but not where you think it would.
