If you remove the "payment" view from your "checkout workflow" I would guess that you still get the same error. Do you confirm ? If so, there is a high chance that it comes from the sending of the email which takes too much time (maybe the website is not able to contact the email server you configured (or have configured) on your server and waits the timeout period of 60 seconds) compared to the allowed processing time of your web server's watchdog, or something like that.
