The nature of a joomla website has too many external moving parts. You need to be careful as it's a double edge sword. Also i´m talking with varnish and hikashop have them as partner, have you tested it? does it really deserve the price? Regarding Varnish, I didn't try but since they have a specific integration, there should be no compatibility issue and if there is, you can always have them fix it.
