Instead you should use the "PayPal Express Checkout" payment plugin. That way, the customers will be able to checkout through PayPal and the user data from PayPal will be saved in the order where it should be. The standard PayPal plugin isn't supposed to work like that and if you don't ask the user his address during the HikaShop checkout, the address won't be in the order with it. If nevertheless you prefer to use the standard PayPal plugin without the fields being filled by the user on the HikaShop checkout and have the plugin use the information sent by PayPal after the payment, the only solution will be to modify the code of the PayPal plugin in the function onPaymentNotification of the file plugins/hikashoppayment/paypal/paypal.php It won't be easy so if you're not a developer, you'll want to ask one to do it for you.
