For user custom field, you required the plugin "HikaShop user synchronization plugin" (system / hikashopuser) to display the custom fields into the customer profile on the front end. In the backend, nothing special to do for the HikaShop customer page. But you can set the option to display the value in the HikaShop customer listing.
