Usually when it is assigned to a given menu item, it will continue to the sub pages under that menu item. It would be nice to be able to assign templates to component instead, but I'm not sure if it is possible natively in Joomla at the moment. It may be possible using a plugin, but you really should ask the Joomla community more on this.
