What did I do and how do i fix this? Also please note that if I navigate to the category through this path; mydomain.com/category/sub-category/product/listing the page appears normal with 4 columns as I set in the options, but clicking through the category menus it appears different. You must not be editing the correct menu/module options. Please give a link to the page with the issue and we can tell you what to do more precisely.
