Instead you should use the "PayPal Express Checkout" payment plugin. That way, the customers will be able to checkout through PayPal and the user data from PayPal will be saved in the order where it should be. The standard PayPal plugin isn't supposed to work like that and if you don't ask the user his address during the HikaShop checkout, the address won't be in the order with it.
