Display ALL products, or multiple categories

Hey all, I have a "shop" link in my main menu that links through fine.

Now I have 2 categories of products at the moment, clothing, and equipment.

My problem is that when I make the link I can only select either clothing, or equipment, which means that I have to choose one or the other to display to the customer by default. I still want to have the categories for filtering purposes, but is there a way to make the link just display ALL products regardless of their category, or to select multiple categories to display?

Yes you can do that.
Create a menu of the type 'products listing' via the joomla menu manager and in the hikashop options of the menu, set the option "sub element filters" to "all sub elements".

However, I was wondering if there is a way to have a "view all" option for each category in my shop? (So it shows all products within that particular category)?

When there is pagination in the category listing, there is no choice for a "view all" .... is there a way to add this?

We do have a dropdown in the pagination system which allows to change the number of elements per page and one of the choices in that dropdown is "all" in order to see all the results.
There is even no option to deactivate that in Hikashop.
So I'm still not sure what you're talking about.

Sorry, let me explain some more: we would like the pagination to ALSO offer the option of a "view all" so customers have a choice to either go from page to page or click on "view all" to see all the items within that category at once. Is this possible?

That's what I'm saying. There is already such thing by default.
For example look here:

See at the bottom of the page, the pagination dropdown has a "all" choice which allows you to see all the products of the current category at once.

The client doesn't want the "display" drop down to appear. Instead they'd like a button next to the page number buttons that says "View All"

As we are using the Joomla pagination, you will have to do an override on the Joomla pagination.
