update customer info in back end

A customer has updated their phone number. Now she displays the correct number in the front end.
But in the back end I'm still seeing the old number.

Where do you still see the same phone number in the backend ?
In the order ? Or in the user address ?
It's normal that the order would still display the old number since the user cannot change any information of an order from the frontend. However, I don't see how the number would not be updated in the address of the user account.
