The client has asked for 2 things, neither of which I can see a way to do.
1. Start with nothing in the Button style box (that is, no style selected) and make it mandatory for them to select a style before it will allow the user to continue (like a mandatory field on a form).
2. Have an image of the chosen button appear next to the field when the user selects their start button (see image)

1. There is indeed no option to do that. Options are not mandatory (that's why they are called options
).
2. There is also no option to do that.
No it doesn't mean that it's not possible. You can edit the file "quantity" of the view "product" via the menu Display>Views and add custom javascript to the add to cart button in order to check that the option was selected and you can edit the file "option" of the view "product" and change the javascript updating the total price to also handle the dynamic display of an image of the currently selected option.
That will however require developer skills.
