multiple checkouts

I need to customise the checkout process depending on the product being sold. Specifically I want to bypass the register and shipping information for some products and not for others.

To bypass the shipping, yes. Just don't set a weight for the products which don't require shipping.
To bypass the registration, no. It's all or nothing here.

What about the address step - can I remove it from the process for some products?

No.

I would really like the register process to just be an email address and then ideally go straight to the payment method. I will collect all the address information with the product for this product.

Yes, you can remove the address view then and disable the custom address fields via the menu Display->Custom fields.

You can't change the checkout workflow for each product. There is only one checkout workflow for the whole website.

You can change the label for each step, yes. Like any text in HikaShop, you can override its translation:
