how to make order without registration and without email input?

There is already a lot of topics talking about that. Thanks to use the search before posting.
In Configuration > Checkout, disable the login in the "yes / no" option, set the option "Registration" to "No registration".
Then in Display > Custom fields, disable the field for the email.
Do some translation override for the "Register" button, set it a value like "Use this address".

There is no email field in HikaShop.
The email is necessary for the user in HikaShop. If you don't want a user to be created in HikaShop, you can remove the login and address views from the checkout workflow option of the configuration.

But how can i in this way take email with user data (tel, shipping adress)?

The physical address has to be attached to an email address. You can't have the physical address without the email address. It's either both or none.
