Checkout Layout

How do you actually modify the layout of the Checkout.

Do you have more details on what you want to change ?

If you want to change the order of the different blocks, you can simply move them in the checkout workflow option of the configuration.

I mean, the positioning of the fields, style of the text, etc etc

You can edit the corresponding view in Display > Views, for the cart in the checkout, the view to edit is "checkout / cart" for the shipping it's "checkout / shipping".
For the css you can make the changes in the frontend css file in Config > Display > CSS.
