Add a "Please select" to characteristics

Set the "Characteristics dynamic display" setting to "always" in the HikaShop configuration and you'll have "please select" choices.

Then, turn off that option, and instead add a value "please select" in your characteristics and in each product, add a variant for the please select value of each characteristic. Then, make that variant as default and edit it to have a stock at 0 or a sale end date in the past so that the add to cart is not available by default. Instead of the add to cart button, you'll get a message which you can customize with a translation override.
