How to mark a product as "special"

it's there any way to mark a product as "special" or "highlighted" in order to show a particular list of products?

You should create a new unpublished category and add it to your products as second category.

Then, use that category in your products listing menu/module's hikashop options as "associated category" and that will do what you want.
