How can you modify the thumbnail sizes for the category listing?

I think that you'll maybe find your answer there .

Yes. In each menu/module's hikashop options, you have the options "image width" and "image height" that you can use to set the size of the thumbnails for that menu/module.
If you have for example one menu per categories, you can have one size of thumbnails per category.

thumbnails are resized but how can i resize the size of the box around the image and description ?

The size of that box is calculated automatically base done:
the total listing area width
the margin configured in the options of your listing menu
the number of columns configured in the options of your listing menu
