Language of registration and shipping form

When filling out the form for a customer in Hong Kong, the State field is in Chinese. I, my client (the site owner) and many of their customers are not Chinese speakers (certainly not readers). How do I change these fields to English?

Also, the default country on the shipping form is France. How do I change this?

To edit the zone names, you have to edit it in HikaShop > System > Zones and rename them.
To change the default country in the adress, go in HikaShop > Display > Custom fields, and change the default countre for the field "state"
