Hello, is it possible to convert currency format from "100,25 rub." to "100 rub. 25 cop."?

There is no option in HikaShop to have this kind of display price, the only way will be to custom price display.
Note that to get what you want, the price have to be process in order to "cut" rub from cop.

I do think that you can do that.
Edit your currency settings via the menu System>Currencies, and change the decimal separator to " rub. " and change the currency symbol to " cop.".
That should display like that. However, you need to check the prices without decimals, because in that case, it might result in "100 cop.", which is not what you want. And if that's the case, then yes, as Philippe said, custom work would be needed.
