Additional Notes for Products (on the backend)

-- Joomla version -- : 3.8.7

I'm not sure how I'd go about doing this, but I'd like to be able to put private notes for a product that isn't visible on the website. I want to be able to see it through the backend of Hikashop.

I would also like to be able to add a "cost of goods sold" box for each product. Same, not to be seen on the front end.

What would be the best way to achieve this?

The better way to do it may be to use product custom field and to use options in Display part to have only the custom field where you need to have it.
