question about shipping method.
I have 2 shipping methods. 1 for shipping with a minimum weight of 10 kg and 1 for collection.
If 10 kg has not yet been ordered, this option is also not visible with a message stating that not enough has been ordered yet.. only the pick up is visible.
is it possible to show that?

What you could do is to split the collection shipping method into two, one with a minimum weight of 10kg, and one with a maximum weight of 10kg.
Then, in the description of the collection shipping method with a maximum weight of 10kg, you could write that shipping to the address of the customer is only possible above 10 kg ordered.
