Options is a feature only available in the commercial edition of HikaShop. If you install the Starter edition on top of an Essential edition, it will downgrade the Essential edition to the Starter edition and thus you'll loose the features of the Essential edition.
You would have to install the Essential edition again on top of it to get back the Essential edition features and your options.
