We have several questions in this topic:

1. Where do we set the product inventory number when creating a product.

2. Does the shop countdown, or reduce, the inventory value as products are sold.

3. Is there a guidance document for dealing with inventory management?

1. In the "quantity" field.

2. Yes.

3. The quantity will be updated automatically.
And you can see it on the products listing.
And if you want to be notified when the stock is low, you can configure the HikaShop out of stock plugin via the Joomla plugins manager and the cron task on your HikaShop configuration.
