Hi,
The address block of the emails uses the address format of HikaShop, the same one as on the frontend. You can edit it in the "Address format" setting of the Checkout tab of the HikaShop configuration.
Add your field there with its column name between braces. For example, if the column name of your custom field is address_house_number:

{address_street} {address_house_number}
The column name is shown in the listing of Display > Custom fields. Once you save the configuration, the house number appears in the billing and shipping addresses of the emails, and everywhere else the addresses are displayed.
