Hi,
Is that issue happening with each payment methods ? Or only with bank Transfer ?
Please set the Joomla error reporting level to "maximum", if there is a PHP error thanks to this setting it will be displayed and will give us more details.

Hi,
Your issue is coming from the fact that the Joomla class JMail wasn't found, and that Hikashop is trying to use that class to send an email to you and your customer saying that an order has been created on your shop. So you're actually having a Joomla Issue with your emails, can you send other emails from your website except the hikashop one ?

Problem solved from email by Jerome:

The problem does not come from HikaShop and is not link with HikaShop.
It's a problem in your Joomla installation where you have some missing parts.

===
The error occurs because the file where the class JMailHelper is declared is missing. That file is libraries/joomla/mail/helper.php. You can copy this file from the installation archive to the server and see if that fixes the problem.
In my particular case all files from libraries/joomla/mail were missing
