checkout very slow

on entering checkout it's taking 10-30secs for the cart listing to appear. causing problems for customers!

Such behavior is generally caused by plugins like shipping plugins.
If you do have UPS/Fedex/etc plugin and it require to perform web services calls to get a shipping estimation ; it could delay the page processing and give you such kind of issue.
So it would be interesting to have more details about your HikaShop configuration.

The only shipping plugin enabled is the manual shipping and there are no payment options enabled as payments are dealt with using separate accounting software .

I've checked your website on my end but all your pages take 10-30 seconds (or even more) to be displayed.
For example, the about us page on your website (which is not a HikaShop page):

It takes 5 seconds to generate the HTML and receive it, but the mootools-more.js file alone takes 27 seconds to be downloaded.
To me, it looks like your server or your server connection is too slow.
I would recommend contacting your hosting support and ask them why the website is so slow and what they propose to make it faster.
