Is there a way of setting postage costs per item? Eg each item has its own cost that add up to form the actual postage cost?

Also, is it possible to do this based upon zones, eg UK, europe and rest of world?

Hi,

Yes. Create three manual shipping methods via the menu System>Shipping methods, restricted to the different zones and with the "price per product" setting turned on. Then, in each product, you'll get a "shipping prices" area where you can define one or several shipping costs for each shipping methods for that product.
