Hi,

There is no system to display options for shipping methods in HikaShop.
In that case, I would recommend developing your own shipping method selection view for the checkout and storing that the way you want in the order.
That will require quite some development.
You can look at the checkout API in order to create your own checkout step:

And you can see an example with the envoimoinscher plugin which adds its own pickup interface based on the shipping method selected:
