Hi,

In the menu System>Shipping methods, you can create "manual shipping methods" via the "new" button.
In each one, you have a min and a max post code restriction setting you can use to restrict that shipping method to a range of post codes.
So you can create as many shipping methods as you want with the different post codes for your different areas.
