Only One Payment Method

1. If we only have one payment option do we need to add the payment method in the checkout workflow?1.
2. Do we need to display it?

1. Yes you do.
2. You can hide it using some CSS and use the HikaShop option to auto select the payment method.

2. We have "Auto select default shipping and payment methods" set to yes.

Yes. Adding such CSS will do:
#hikashop_payment_methods{display:none;}
