checkout parse error...and no tax showing up.

Getting this error during checkout.

Also, I've set the tax for 8.25% and tax does NOT show up in checkout.

The error you're getting is because you modified the order creation notification email and made a mistake in your modifications. If you want to remove your modifications, you can delete them on the emails listing available via the menu System->Emails.

If you don't see the tax, it's because you're missing something in the tax configuration.Did you add the tax category to your products ? Could you do a screenshot of your tax rules listing ?

reverted back to default email and that fixed it the parse error.
