I have noticed that sometimes the canonical urls changes by itself.
Lets say the canonical URL is /mobiles/product/apple-iphone-6 then by itself it changes to /mobiles/product/cid-571
For some reason it is always changes to cid-(number), if I'm not wrong i think thats the product number?, but this does not happen to all items, only to the ones with extra "options"
Please understand that the canonical are NOT changing by themselves.
If the canonical is empty and the setting is activated, the canonical URL will be fill.
Otherwise, it will stay untouched.
