Is there an easy way to include a link in the product view which opens a popup form where to indtroduce a phone number or an email address and ask about the displayed product (so it means the form has to include the url of the product) ?

The best solution will probably be to directly put the code of your popup through the "show_default" file of the "Product" view, of your front-end template via "Hikashop->Display->Views".
Note that some development skill will be required.
